Each steer will vary in weight, and vary in leanness which determines the number of steaks, size of roasts, and how much ground beef each steer will yield. Therefore, it is impossible to list the “actual” amount of cuts in a 1/2 Beef Package.
You can choose the thickness of your steaks: 1” or 1 ¼” or 1 ½”. You can have a Prime Rib Roast OR 7 to 8 Rib-Eye Steaks. You may also opt for NY Steaks and Tenderloins in place of Porterhouse and T-Bone Steaks, or 1/2 and 1/2 (they come from the same cut). Let us know if you want the Liver or to use part of your ground beef for sausages.

Our sausages have all natural ingredients and no preservatives. There is an additional charge for their preparation. The amount of ground beef you choose to use for sausage will be subtracted from the total pounds of ground beef in your package. None of our sausages are cooked and our Breakfast and Italian sausages have no soy or milk.
